So as you know already I have a thing for crunchy crap. So eliminating the “crap” part and replacing it with Paleo I found Kale!
Kale is an amazing leafy green that is so versatile! You can cook it and wilt it down, add it with your salad or bake it to make a delicious crunchy snack.
I like mine EXTRA “krunchy”! So I over cook mine just a bit.
The easiest way I find is to go to your local grocer and find the organic (if possible) pre-bagged and pre-chopped Kale. Or you can simply buy a head of Kale and chop yourself.

  

Ingredients:
1 Head of Kale (About 3 cups)
1 TBSP of fat such as Olive Oil (try to buy American made) or Ghee
Seasoning **Now you can get artsy fartsy with this… add Sea Salts, Pepper, Garlic Powder… whatever your heart is desiring at the time. I sometimes add a bit of lemon juice to mine.
I sprinkle mine with:
1/2 Tsp Sea Salt
1/2 Tsp Onion Powder
1/2 Tsp Smoked Paprika
Directions:
Pre-Heat oven at 350 degrees F.

Chop Kale removing as many thick stems as possible.

In a LARGE mixing bowl add Kale and oil/ghee together. You want to mix by hand gently rubbing/massaging Kale leaves. This ensures the oil/ghee is evenly distributed. If you add too much fat your Kale will be soggy.

Add seasoning to taste.

Mix again by band ensuring even distribution.

Line baking sheet with parchment paper.

Evenly put Kale onto baking sheet lined with parchment paper.

Bake for about 20 minutes… for extra Krunchy Kale bake a bit longer.

**NOTE: It is completely normal for your batch of Krunchy Kale to shrink dramatically.**
