I get this comment a lot…”I would do Paleo but it seems so time consuming.” My first response is… once you accumulate all the ingredients its really not. My second is can you really put a limit on quality healthy food that is beneficial to you? I mean hasn’t laziness got the best of most of us and thats why we are in the positions that we are in?
So, with that said; here is my uber easy go to meal when I am being lazy.
PALEO SPAGHETTI WITH MEAT SAUCE
Ingredients
1 lb of Grass-fed Ground Beef
1 Garlic Clove
1/4 TSP Onion Powder
1/4 TSP of Oregano
1 Spaghetti Squash
1 Jar of Organic Pasta Sauce (I use whole foods brand… be sure to check the label for ingredients… no sugars!!)
Salt and pepper to taste
Directions
1. Half your Spaghetti Squash… remove the seeds and inner guts and dispose.
2. I like to rub my squash inside with ghee you may use any type of fat you want. After I do that I pop my squash face down on a microwave safe dish (usually a pyrex baking dish) and cook for about 8-10 min.
**I usually bake my squash in the stove… at 425 F for about 15 min but if I am crunched for time and sanity I opt for the microwave version**
3. While the squash is cooking I add a bit of Olive Oil to a pan on Med-High heat and chop the garlic.. Add garlic to the pan and allow to cook for about a min.
4. Add ground beef to the pan
5. While the beef is browning you can add your herbs
6. Once your squash is done remove from microwave and flip so it is face up… CAUTION: that little sucker is hot as heck!- Microwave for another 3-5 min
7. Once your ground beef is cooked turn the heat down and add the pasta sauce… mix well.
8. Once squash is done you can remove from microwave… take a for and gently start raking the inside and it will just come apart and look like spaghetti.
9. Add the spaghetti squash to a bowl… add some salt and pepper to taste
